Today I was craving macaroni and cheese.

For some people that would mean getting a box out of the pantry and whipping up a Kraft dinner. As my boss said recently, "My brain doesn't parse that as food." Rather than my typical cheddar-based version, I wound up making one with gruyere and emmentaler, plus pancetta. If you listen carefully, you can hear my arteries hardening.
